Apple and Summer Fruits Pie





My Super Simple Lemonade recipe was pretty popular so I thought I would share with you more baking. An Apple and Summer Fruits Pie - yum yum! So easy to do.

Sift the 125g of plain flour into a large bowl and add 100g of butter. Rub in with your fingertips until the mixture resembles fine breadcrumbs. Stir a pinch of salt and then add 2-3 tbsp water and mix to a firm dough. Knead the dough briefly and gently on a floured surface. Wrap in cling film/ I have a mixing bowl with a lid so I use that but cover and place in the fridge or somewhere cold for at least 15 - 30 minutes.

For the filling slice up two large apples and heat in a large pot. Add half a cup of water (about 100ml if you're being precise) and brown sugar to taste (I never measure this, I just add and taste as I go). Heat until the apples go soft and turn the heat off.

Now split your pastry into two piece and roll one out into a large enough circle to cover your pie dish. Place over so it covers the base and side. Fill with apple and throw in as many frozen/fresh summer fruits as you can fit. Sprinkle with a little bit of extra sugar. Using a brush and milk moisten the pastry edge where the lid will rest.  Roll out the other half of pastry and place on top of the pie. Trim the edge and using a knife seal the edges of the pie (pat the blade down). Using a knife add some ventilation holes or your pie will burst in the oven. Brush milk over the entire pie and sprinkle with sugar (lightly)

I then bake in a 180c preheated oven until the pastry is solid and golden. I good way to test is to tap it with a spoon. Every oven I've ever had has cooked pie at different speeds but normally around 30 minutes.
