Blueberry & Raspberry American Pancakes




135g  plain flour
1 tsp baking powder
½ tsp salt (or use salted butter)
2 tbsp caster sugar
130ml  milk
1 large egg
2 tbsp melted butter


In a large bowl sift the flour, baking powder and sugar together (and salt if needed)

In a jug lightly whisk together the milk and egg, then whisk in melted butter.

Beat the milk mixture into the flour using a fork until smooth. Add raspberries and blueberries to taste. I like to mush my fruit up a little so the fruit juice mixes with the batter.

Use a little butter or oil in a frying pan and pour in batter in a frying pan on medium heat, one large spoonful at a time. Flip pancakes when you see little bubbles rising to the surface. Cook the other side until both are golden brown (basically, try not to burn them).

Serve with icing sugar, maple syrup, honey, butter..what ever you wish!
