Lasagne with Chorizo and Olives


Start by prepping your ingredients. I chop half an onion, a pepper
(red, yellow or orange, your choice), 5 Olives, 70g of Chorizo
(or you can use any Spanish sausage and just add a little paprika to the sauce)
& 3 cloves of garlic.




Fry the onion and garlic till soft then slowly add mince. 
Im using 500g of lean beef mince.
Brown the mince then add a cube of beef stock & 800g of chopped tomatoes.

Season (easy on the salt) and add a dash of balsamic vinegar, 
a pinch of crushed chillies & half a tbsp of sugar.
Throw in all the chopped pepper, chorizo and olives.
Reduce the heat and simmer for 40 minutes.




For the Cheese Sauce melt 50g of salted butter and add 50g of plain flour. 
Mix together into a paste then  gradually add milk & whisk until completely smooth. 
Add grated cheese gradually, whisk until smooth again.
Use milk or flour to adjust the consistency.

With both parts made start by preheating the oven to around 180c for fan.
Layer an oven dish in the following order:
Lasagne sheets, Cheese, Meat.
On the top layer of meat add Lasagne Sheets & all remaining cheese sauce.
Cook in the Oven for 35 minutes. Add grated cheese on to the top then cook for a final 10Mins.



Serve.
