Heat a little oil in a large saucepan and then add 1 finely chopped onion on a medium heat.
Once soft, add one sliced stick of celery, one sliced leek, one diced potato and a knob of butter.
Cover and cook for 5 minutes.
Pour in 1 ltr of chicken or veggie stock ( I use home made stock but its 100% up to you)
Using one head of broccoli add any chunky bits and cook for about 5 minutes.
Add the rest of the broccoli and cook for a further 5 minutes.
Crumble in 140g of stilton and set aside.
Once cool (or if you have soup maker, straight away) blend until smooth.
